Affordable Slow Cooker Meals

The slow cooker is a broke person's best friend. You dump cheap ingredients in the morning, go about your day, and come home to a ready dinner that smells incredible. These affordable slow cooker meals prove that budget cooking can be completely effortless.

1. Slow Cooker Pulled Chicken

Cost: $11.50 | 6-8 hours on low | Versatile — use in tacos, sandwiches, bowls

Ingredients (serves 6)

  • 2 lbs chicken thighs, boneless ($5.50)
  • 1 cup BBQ sauce ($1.80)
  • 1/2 cup chicken broth ($0.60)
  • 1 onion, sliced ($0.50)
  • 3 cloves garlic, minced ($0.20)
  • 1 tsp smoked paprika, cumin, chili powder ($0.20)
  • Salt and pepper
  • Burger buns or tortillas for serving ($1.80)
  • Coleslaw mix ($0.90)

Instructions

  1. Place onion slices on the bottom of the slow cooker.
  2. Season chicken with smoked paprika, cumin, chili powder, salt, and pepper.

Ingredients (serves 6)

  • 1 lb dry white beans ($1.50) or 3 cans ($2.70)
  • 4 cups chicken or vegetable broth ($1.60)
  • 2 cups water ($0)
  • 1 smoked ham hock or 2 strips bacon ($1.50)
  • 1 onion, 3 carrots, 2 celery stalks ($1.20)
  • 4 cloves garlic ($0.25)
  • 1 tsp thyme, rosemary, bay leaf ($0.20)
  • Salt, black pepper
  • Crusty bread to serve ($1.80)

Instructions

  1. If using dry beans, soak overnight. Drain.
  2. Add all ingredients to slow cooker except salt (salt toughens beans if added too early).

  4. Remove ham hock, shred any meat, discard bone and skin. Return meat to soup.

Instructions

Instructions
